As fall begins many families need recipes that are easy to prepare. Here is an Italian meal that is extremely easy to prepare and it tastes great.

As the weather begins to cool down in some areas across the United States, families are looking for recipes that are both comforting and warm. As school begins, schedules often become more hectic. Add a few sports for the kids and the extra-added weight of homework, and there really isn’t much time in the evening for preparing comfort food during the middle of the week. Though this isn’t necessarily a quick recipe, it isn’t hands on and it is filling, tastes great, and is extremely easy to prepare.

Ingredients

  • 1 TBS of Olive Oil
  • 1 small yellow onion
  • 1 garlic clove
  • 1 bag of sliced mushrooms
  • 1 extra large jar of spaghetti sauce (such as Prego) - 2 jars will work as well
  • 4 uncooked sweet Italian sausages
  • 4 uncooked hot Italian sausages
  • 2 TBS of hot sauce – such as (optional)
  • 1 package of thin spaghetti
  • ½ cup of ricotta cheese
  • ½ cup of Parmesan cheese
  • sprig of basil (garnish)

Directions

  1. Remove the skin from the yellow onion and dice the onion. Remove the skin from the garlic and dice the garlic.
  2. Put a large pot on the stove and set the heat to medium high. Pour in the olive oil and put the yellow onion and the garlic in the pot and sauté until the onion is translucent.
  3. Add the mushrooms to the pot, stir often and cook the vegetables for 2 minutes.
  4. Pour the spaghetti sauce in the pot and turn down the heat to low.
  5. Add 2 TBS of hot sauce to the sauce. Then add the sweet and hot Italian sausages to the pot.
  6. Place a cover over the pot and cook on low for three hours.
  7. Prepare the package of thin spaghetti as directed on the box.
  8. Meanwhile skim some of the fat off of the pot with the sauce and the sausages.
  9. Then, drain and pour spaghetti into a large pasta bowl (platter size).
  10. Pour the spaghetti sauce over the spaghetti and gracefully place the sausages on top of the pasta.
  11. Sprinkle the entire dish with some Parmesan cheese and add a dollop (1/2 cup) of ricotta cheese to the top of the dish.
  12. Artfully place some basil in the middle of the ricotta cheese. Place the pasta bowl on the table so that family members or guests can serve themselves.

What to Serve With Spaghetti and Sausages

Garlic bread is always an excellent option to serve with an Italian meal. If you are watching your waistline, a quick side salad can accompany this dish well. If you choose to make this dish for guests on the weekend consider serving an antipasto platter as an appetizer and include both the garlic bread and salad with the meal.

Enjoy!
